I am Chef Vatche. I roast specialty coffee in Clovis on Palo Alto Avenue — roasted fresh every Wednesday and Thursday. Small batches. Whole bean only. Sanctuary Roasting is a working roastery, not a café — we roast and ship, and on Wednesdays and Thursdays, 10 AM to 4 PM, you can walk in and buy a bag of what just came off the roaster.

Sanctuary Roasting started as an extension of my kitchen. Twenty-four years cooking professionally taught me how much one ingredient can change a meal. Coffee deserves the same care.

Who we are

Twenty-four years in food. Culinary school. Cracked Pepper Bistro in Fresno for nineteen years. Guy's Grocery Games winner on Food Network in 2019. Armenian heritage from Lebanon, where coffee is part of every meal.

I bring the same standards to coffee that I bring to a plate.

What we roast

Every green bean we buy is specialty grade — the top 10% of all coffee in the world. We roast on a Primo roaster, by hand, in small batches, fresh every Wednesday and Thursday, and we taste every batch before it goes out the door.

  • Brazil Single Origin — peanut butter, sweet cream, vanilla. Light roast.
  • Guatemala Single Origin Huehuetenango — cocoa, fig, brown sugar. Light roast.
  • House Espresso Blend — caramel, dark chocolate, walnut. Dark roast.
  • Midnight Oil — bittersweet chocolate, brown sugar, roasted grain. Bold dark roast.
  • Trinity Blend — chocolate, toffee, spice. Medium roast.
  • MW D'Caff Mexico — Mountain Water Process decaf. Milk chocolate, caramel, toffee. Medium roast.
  • Breakfast in Peru — roasted almond, brown sugar, milk chocolate. Medium roast.
  • Indonesia Java — cinnamon, dark honey, herbal tea. Light roast.
  • Surj — our Armenian coffee, made for the jazzve. Toasty, low acidity, full body. Dark roast blend.

In-person pickup

If you live in Clovis or Fresno, order online and choose “Pickup” at checkout. Two locations — and either way, wait for your ready-for-pickup email before coming in:

  • Sanctuary Coffee Refuge at Northwest Church, Fresno — open seven days a week and always stocked with our coffee. Ordering ahead makes sure a particular coffee, like decaf, is there for you. Orders that need replenishment are generally available Wednesday or Thursday, when we roast; orders placed Friday or Saturday may wait until then.
  • The roastery, Clovis — Wednesdays and Thursdays only, 10:00 AM–4:00 PM; closed to customers the other days.

Why we are different from other Clovis coffee roasters

Most roasters never taste their own coffee with the rigor of a chef. I do. Twenty-four years of training your palate with food translates straight to coffee. The cup tells you everything.
